Compared with other cured meat products such as parma Ham or cured sausages, Paleta Iberica from Extremadura has a more intense, sweet and nutty flavor; it is softer and more delicate in the mouthfeel. This is due to the higher percentage of intramuscular fat in Iberian pork, which gives the meat a creamy texture that melts in the mouth
