The production process for Jamon Iberico Extremadura is time-consuming and requires a high degree of skill and expertise. After the pigs are slaughtered, the ham is carefully cleaned and salted, then hung to dry and cure for several months. During this time, the ham must be closely monitored and turned regularly to ensure even curing and the development of the desired flavor and texture.

Once the curing process is complete, the ham is typically aged for several months to several years, depending on the desired flavor and texture level. The resulting ham has a rich, complex aroma and a melt-in-your-mouth texture.
